Home-made Radish Cake (Carrot Cake) 箩卜糕

                    Radish cake is one of my favorite food during the Chinese New Year. Making radish cake is not difficult only if you know the radish to flour ratio.   And this is my secret recipe

Ingredients for the flour mixture: 2kg radish
                                                    340g rice flour(粘米粉)
                                                    60g wheat starch(澄粉)
                                                    1 &1/2 cup stock


                   The other ingredients are the dry shrimps(虾米), chinese sausages(腊肠), the chinese style preserved meat(腊肉)and the leeks(大蒜)
             

Saute the ingredients till aromatic

                    2kg of radish, peeled and shredded. To provide a better texture, I mix the shredded radish with 3/4cup coarsely chopped.
           

                    Cook the radish till soft with medium low heat, add in pinch of salt and white pepper. Add in stock and mix well with the radish. Then bring it to boil. Off the heat. Add in flour and mix well.

                   Add in the sauteed ingredients and mix well again. Pour the mixture into a greased tray and steam(medium heat) for 1 hr to 70min

Spread chopped spring onion when it's hot (Optional)

Slice when the cake is completely cool

Brown both sides and serve with chilli sauce
