Steam Soon Hock HK Style 清蒸筍壳

                    It's rare to find this freshwater fish in supermarket, I don't even try to think I can find the live one!   But I found it  ...
                   
                        The price, what I think, is reasonable.  This one I bought was about 800+g and it cost me 18+ bucks, even cheaper than a white pomfret.


 I steamed this fish for about 10min with high heat.

                       Get rid of the juice,ginger...etc, add in spring onion, coriander leaves and pour in hot oil.

Pancake

Ingredients: (6 pancakes approx)
Cake flour 110g,  baking powder 1/2tsp,  bicarbonate of soda 1/4tsp, 1 egg,  sugar 10g,  milk 100ml, honey 20g,  butter(melted) 20g

                    Whisk egg and sugar in a jug, add in milk and honey and whisk until combined.  Sift the flour mixture, mix well.  Add melted butter and mix to smooth batter.  Allow the batter to stand for 15 minutes. 

                    Warm a non-stick pan with LOW heat.  **NO NEED TO OIL THE PAN**  Stir and ladle in the batter.  Flip it over when bubbles begin to form on the surface of the pancake

Cook the other side about 30-40 sec and it's done
This is the first pancake, it's a bit under done, should brown a bit more.  @.@"

These 2 are just fine :)

Add on the toppings, honey is my first choice.

Homemade Roast Crispy Pork Belly 脆皮烧肉

                    Another big success!  I thank the Granny who passed me her recipe. Thank you. ;)

                    The oven I use to roast the pork belly.  This oven is known as 热波炉* in Chinese, which is actually a convention oven with heating coil and a fan attached to the cover of a big glass bowl.  The advantage of this oven is- it can reduce the fumes and smell and hence less greasy and messy cleaning after cooking.

                    A perfect crackling of pork rind, without charcoal.  The dripping oil was collected on the aluminium foil below the rack, which was then easily wrapped and got rid of.   :)

Cut the roast pork belly lengthwise, it's juicy, isn't it?

                    *热波炉 is different from 光波炉(halogen convention oven). This is my oven, and it's not really a new toy.  I bought it almost 2 years ago liao.

Homemade Chao Zhou Fen Guo (潮州粉果)

Recipe for wrappers  :Wheat Starch  75g,
                                    Potato Starch 15g,
                                    Tapioca Starch 85g,
                                    Boiling Water 220g &
                                    Cooking Oil 6g
                                    A pinch of salt and sugar (optional)

The filling ingredients:  bangkuang (yam bean or 沙葛), minced pork, dried shrimps, sweet preserved radish (chai por or 菜脯), dried mushrooms and deep fried peanuts.
                  

                    Mix the wheat starch and potato starch(salt and sugar, optional). Add in the boiling water and stir quickly. Knead in the tapioca starch and oil and make it to a smooth dough.

                     There are many wrapping methods, and these were the crescent shaped fen guo I wrapped.    **Remember to grease the plate beforehand :)

Simply steam with high heat for 5-6 min and they can be served.
