- Cake flour 100g
- Bread flour 50g
- Butter 80g
- Sugar 20g
- Salt 2g
- Water 16g (Mix all the above, then water the last)
- This recipe can make 6 pies ( Ø3" or Ø75mm disposable mini pie pans )
- Cut in the butter with fingertips or pastry cutter or 'pulse' function for food processor.
- Water must be the last to be added.
- DON'T over mix the pastry.
- Wrap the dough with cling plastic and put it in the fridge for 30min.
- Preheat oven at 200C
- Bake at 200C for 25min.
