Deep-fried Tofu with Sichuan Pepper and Salt 椒盐豆腐

 photo sichuanpeppertofu.GIF            To make the Sichuan pepper salt ( 椒盐) , I mix 2tsp of peppercorn with 1tsp of salt.  Put the mix into a non-stick pan.  NO oil, low heat and stir the mix until the salt turns pale yellow.  Crush the salt mixture in a pestle and mortar.  The Sichuan pepper salt can then be kept in a bottle.

          Pat dry the tofu and coat it with flour.  Deep fried the flour coated tofu till golden.  Heat the wok, add in few drops of oil.  Saute some chopped garlic and chilli.  Sprinkle in a pinch of Sichuan pepper salt.  Add in the fried tofu.  Toss to mix well and it's done.  开饭啦!
