Homemade Snowskin Mooncakes

photo snowskinmooncakes.GIF       Mid Autumn Festival is coming and it's time for me to prepare some mooncakes.      I have made 3 flavors this time, which are the lotus seed snowskin mooncakes, the black sesame snowskin mooncakes and the green tea snowskin mooncakes.

      Actually we have eaten few of them already.
Reminder: Keep the snowskin mooncakes in the freezer and defrosted before consuming.



photo ssmc.GIF             It is homemade lotus seed puree as well.  Soak the lotus seeds overnight and remember to remove the bitter cores, if any.  I cook the seeds with microwave and blend the puree by food processor, so it can save alot of time/energy, or otherwise, it's too tedious.

          Simmer the puree with low heat, by using a non-stick pan.  Don't use olive oil as its flavor is too strong, which will dominate the fragrance of the lotus seeds.  Use veggie oil instead. Add in sugar and maltose (or malt sugar) according to the taste buds.
